Cantaloupe Alaska Recipe
Ingredients
3 ripe cantaloupes, chilled
4 egg whites
Dash of salt
1/2 cup sugar
1 pint firm vanilla ice cream
2 tablespoons halved blanched almonds
Directions
Cut cantaloupes in half and remove seeds; level base.
Beat egg whites and salt until stiff; gradually beat in sugar until meringue is very stiff and glossy.
Place cantaloupes on a cooky sheet; put 1 scoop vanilla ice cream in each half; spread stiff meringue over ice cream and melon; sprinkle with almonds.
Bake in a pre-heated, very hot oven (500°) for 2 minutes, or until meringue is golden.
