Cannellini With Tuna Recipe
Ingredients
1/2 cup cider vinegar
1/3 cup olive oil
2 1/2 teaspoons sugar
3/4 teaspoon salt
1/4 teaspoon pepper
2 15- to 19-ounce cans white kidney beans (cannellini), drained
1 7-ounce jar roasted sweet red peppers, drained and cut into thin strips
1 6 1/2-ounce can tuna, drained and broken into large chunks
1/4 cup pitted ripe olives, each cut in half
2 tablespoons chopped parsley
Lettuce leaves
Directions
1. In large bowl, mix cider vinegar, olive oil, sugar, salt, and pepper. Gently stir in white kidney beans and remaining ingredients except lettuce.
2. Line serving bowl with lettuce leaves; top with bean mixture.
