Cannellini Beans with Tuna Recipe
Ingredients
| Cannellini beans (white beans) -5 to 6 cups cooked or | ||
| Canned cannellini beans -three 16-ounce cans, drained | ||
| Scallions or onion -1/4 cup, finely chopped | ||
| Garlic | 1/2 Teaspoon, finley minced | |
| Dried oregano | 1/2 Teaspoon, crumbled | |
| Parsley | 2 Tablespoon, finely chopped | |
| Red wine vinegar | 1 Tablespoon | |
| Lemon juice - 1/2 lemon | ||
| Olive oil | 1/4 Cup (16 tbs) | |
| Tuna packed in oil -two 6 1/2-ounce cans, drained | ||
| Tomato slices garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1. Take a salad bowl and add beans into. Stir in scallions, garlic, dried oregano, parsley, red wine vinegar, lemon juice and olive oil and combine well. Season with salt and pepper as per the taste preferences.
2. Flake the tuna into big chunks using spoon or knife and blend it with bean mixture by tossing.
SERVING
3. Spoon the spinach bean salad on to the beans and serve with freshly steamed rice after garnishing with tomatoes.
