Cinnamon Candied Yams Recipe
These candied yams are prepared with yams or sweet potatoes. Cooked by boiling along with sugar, orange juice, raisins, orange and lemon slices along with cinnamon and nutmeg, the candied yams are simmered to finish and can be served as desired.
Ingredients
| Sweet potatoes | 6 Medium, pounded | |
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Orange juice | 1 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Packed brown sugar | 1/2 Cup (16 tbs) | |
| Raisins | 1/4 Cup (16 tbs) | |
| Water | 1/4 Cup (16 tbs) | |
| 2 thin slices orange | ||
| 2 thin slices lemon | ||
| Ground cinnamon | 1/2 Teaspoon | |
| Ground nutmeg | 1/4 Teaspoon | |
Directions
Scrub yams or sweet potatoes and peel.
Cut off woody portions and ends.
Cut into 2 inch pieces.
In a 4 quart Dutch oven melt butter or margarine over medium heat.
Stir in orange juice, sugar, brown sugar, raisins, water, orange slices, lemon slices, cinnamon, and nutmeg.
Add yams or sweet potatoes.
Bring to boiling over high heat.
Reduce heat to low.
Cover and simmer for 15 to 20 minutes or till yams are just tender.
Uncover and simmer about 15 minutes more or till yams are glazed, stirring occasionally.
