Candied Yams Recipe
Ingredients
| Yams | 4 Large | |
| Boiling salted water | ||
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
| 3/4 cup firmly packed dark brown sugar | ||
| Water | 1/3 Cup (16 tbs) | |
| Butter | 4 Tablespoon | |
Directions
Cook the yams in boiling salted water to cover until barely tender.
Cool, peel, and cut into halves lengthwise.
Sprinkle with a little salt and pepper.
In a frying pan combine the sugar, water and butter.
Cook over low heat, stirring constantly, until the sugar has melted; do not scorch.
If necessary, add 1 or 2 tablespoons more water.
Lay the yam halves side by side in the frying pan.
Cook over very low heat, turning over once, until the yams are candied on both sides.
This will take about 10 to 12 minutes.
Transfer to a heated serving dish and serve hot.
