Honey Candied Sweet Potatoes Recipe
Ingredients
| Sweet potatoes | 1 pound | |
| Salt | 2 Teaspoon | |
| Honey | 2 1/2 Tablespoon | |
| Water | 4 1/4 Cup (16 tbs) | |
| Brown sugar | 5 Tablespoon | |
| Vinegar | 1 1/2 Teaspoon | |
| Cornstarch | 1 Teaspoon |
Directions
1. Peel the potatoes and cut lengthwise in 1/2 x 4" (1.5 cm x 10 cm) wedges. Combine salt, honey, and 21/2 cups of water.
2. Add the sweet potato wedges and soak for 15-20 minutes. Remove and drain.
3. Bring 13/4 cups water, sugar, and vinegar to a boil over medium-high heat. Add the sweet potato wedges. Cover and cook over medium heat for 20-25 minutes. Uncover and cook for another 5-10 minutes until the liquid is reduced to about 2/3 cups. Transfer the sweet potatoes to a platter. Thicken the remaining sauce with the cornstarch solution and pour over the sweet potatoes.
