Candied Coconut Chips Recipe
Ingredients
| Water | 2 1/2 Cup (16 tbs) | |
| Granulated Sugar | 1 1/2 Cup (16 tbs) | |
| Coconut | 1 1/2 Cup (16 tbs), sliced | |
| 2/3 cup granulated sugar or colored sugar | ||
Directions
Bring water and the 1 1/2 cups sugar to boiling, stirring occasionally.
Boil, uncovered, 25 to 30 minutes or till mixture resembles corn syrup and measures 1 cup.
Remove from heat; stir in coconut slices.
Using slotted spoon lift out a few pieces at a time; quickly roll in the 2/3 cup sugar.
Let dry, lightly covered, on cheesecloth-covered rack for 1 to 2 days.
