Candied Citrus Peels Recipe
Ingredients
Peel from 4 grapefruit or 8 oranges or 12 limes or 12 lemons
Cold water
2 cups sugar
1 cup water
Sugar
Directions
Cut peel into thin strips.
Place in saucepan and cover with cold water; slowly bring to a boil.
Drain.
Repeat boiling and draining process 5 times.
Make a syrup of 2 cups sugar and 1 cup water.
Add peels.
Boil until syrup is very thick and mostly absorbed.
Spread peels on cake rack to cool.
Roll in additional sugar.
Spread on waxed paper or a cake rack to dry.
