Ingredients

 
1 can (about 13 ounces) pineapple chunks
 
1 cup green pepper strips (2 x 1/4")
 
2 tablespoons butter or margarine
 
1 can (10 1/2 ounces) condensed beef broth
 
2 tablespoons cornstarch
 
2 tablespoons honey
 
2 teaspoons lemon juice
 
1/2 teaspoon dry mustard
 
1 can (16 ounces) sweet potatoes, drained
 
1 pound Canadian bacon, cut into 8 slices

Directions

Drain pineapple reserving 1/3 cup syrup.
In saucepan, cook green pepper in butter until tender.
Stir in soup, reserved pineapple syrup, cornstarch, honey, lemon juice, and mustard.
Cook, stirring constantly until thickened.
In 1 1/2-quart casserole, arrange alternate layers of potatoes, bacon, pineapple, and sauce.
Cover; bake at 350 °F. for 45 minutes.
