Campfire Cupcakes Recipe
Ingredients
| 140 g/5 oz light muscovado sugar | ||
| 100 g/4 oz self-raising flour | ||
| 50 g/2 oz cocoa powder | ||
| Baking powder | 1 Teaspoon | |
| Eggs | 3 | |
| 125 ml/4 fl oz vegetable oil | ||
| Milk | 3 Tablespoon | |
| 50 g/2 oz milk chocolate chips | ||
| 30 g pack mini marshmallows | ||
Directions
GETTING READY
1. Pre heat the oven to 180C/160C fan/gas 4
2. Place cupcake cases into a 12-hole muffin or cupcake tin.
MAKING
3. In a large mixing bowl, pour in the measured quantities of sugar, flour, baking powder, and cocoa.
4. Whisk the eggs, milk and vegetable oil till mixed completely.
5. Add the wet ingredients to the dry ingredients until well combined.
6. Pour the batter into the prepared cupcake cases and bake for 20 minutes
7. Remove the cupcakes and set them to cook on a wire rack
FINALIZING
8. Place flavored marshmallows on the top of the cupcakes.
9. Heat the grill to a medium temperature and pop the cupcakes in for 30 secs or until the marshmallows just begin to melt.
SERVING
10. Serve the marshmallow topped cupcakes hot or cold with whipped cream and tea.
TIP
These cupcakes can be made and stored for two days in an airtight container.
