Chili con carne - 2 cans (1 pound )
Beer - 1 cup, divided
Egg - 1
Corn muffin mix - 1 cup
Directions
MAKING
1. In a large kettle, pour out the chili con carne with 1/2 cup beer and mix well. Simmer add more beer if chili becomes too thick.
2. Combine remaining beer and egg. Stir in muffin mix and stir until almost smooth.
3. Pour out a cupful on a hot, lightly greased griddle until golden and cook on both sides to form a pancake.
SERVING
4. Place 2 or 3 pancakes on each plate and top with chili.
