Camden Election Day Cake Recipe

Ingredients

 
1 package active dry yeast
 
2 eggs
 
1/4 cup warm water
 
1/2 teaspoon salt
 
1 teaspoon cinnamon
 
1 teaspoon sugar
 
1/4 teaspoon nutmeg
 
3/4 cup milk, scalded
 
1/8 teaspoon each cloves and mace
 
2 1/2 cups all purpose flour, divided
 
3/4 cup seedless raisins, chopped
 
1/2 cup butter or margarine
 
3/4 cup brown sugar, firmly packed
 
1/4 cup citron, chopped

Directions

Dissolve yeast in warm water; stir in 1 teaspoon sugar.
Stir in cooled milk.
Add about 3/4 cup flour, mix well; cover.
Let rise in warm place (85°) until light and bubbly, about 40 minutes.
Cream butter, beat in brown sugar gradually.
Add eggs, one at a time, beating well after each addition.
Add to yeast mixture.
Mix and sift remaining flour, salt, and spices; stir in.
Batter will be stiff.
Beat until smooth.
Mix in raisins and citron.
Turn into greased and sprayed 10 inch china or glass bundt pan.
Cover.
Let rise in warm place (85°) 1 1/2 hours.
Cover with wax paper, cook in oven 9 to 10 minutes.
Turn pan a quarter turn at 3 minute intervals.
Let stand 10 minutes before turning out of pan.
Cool before frosting with a thin lemon glaze.
