Calzone Recipe
Ingredients
| Yeast | 1 Tablespoon (Dough:) | |
| Honey | 2 Tablespoon (Dough:) | |
| Warm water | 2 Cup (16 tbs) (Dough:) | |
| Salt | 1 Tablespoon (Dough:) | |
| Flour - 5 1/2 to 6 cups | ||
| Ricotta cheese | 1 pound (Filling) | |
| Spinach | 1 (Filling) | |
| Parmesan cheese | 1/2 Cup (16 tbs) (Filling) | |
| Garlic | 1/2 Cup (16 tbs) (Filling) | |
| Onion | 1/2 Cup (16 tbs), minced (Filling) | |
| Salt | To Taste (Filling) | |
| Pepper | 1 To taste (Filling) | |
| Nutmeg - just a dash | ||
Directions
MAKING
1) Into a cup, dissolve the yeast in water and honey and leave to rest for two minutes
2) Into a bowl, add in the flour and salt and yeast mixture and knead to form a smooth dough
3) Cling wrap and allow to rise for an hour
4) Into a frying pan, add the butter and oil and saute the garlic and onion
5) Add to it the cheese and spinach
6) Once the dough has risen, punch down and divide into 10 balls
7) Fill into each ball 1/4 cup of the filling
8) Moisten the edges with water to seal
9) Crimp using a fork and prick the top few times
10) Bake in a preheated oven for 20 minutes at 450F
11) Once out from the oven, brush the top with water

12) Serve warm
