Recipe Story

You could easily make this vegetarian and save time by skipping the flank steak

Ingredients

 
1.5 lb flank steak
 
1 Tbs olive oil
 
1/2 tsp meat tenderizer, divided
 
2 tsp southwestern dried rub OR 1 tsp each chili powder,
 
cumin and oregano
 
salt
 
juice from 1/2 lime
 
1 can pinto beans, drained
 
1 can black beans, drained
 
Mexican style rice, cooked
 
1 cup shredded montery jack cheese
 
1/2 thinly sliced red onion
 
1/2 cup red bell pepper diced finely
 
8 burrito size flour tortillas
 
guacamole, sour cream, sliced green onions for garnish

Directions

rub steak all over with olive oil, prick surface all over
with a fork and sprinkle meat tenderizer on each side, rub with
herbs on each side and sprinkle with lime juice.
Grill on med high heat for 7 mins per side,or
until medium rare. Let rest 10 mins slice thinly across the grain
heat tortillas in a large dry skillet briefly on each side until
pliable. Add filling - first rice, then beans, meat, red onion,
cheese and red peppers. Roll up into a burrito. Wrap in foil.
Bake in a 350 F oven for 15 mins to heat through. Garnish as desired
and serve

sounds great but to make it Californian you need to use Sonoma Jack Jalapeno or Habanaro cheese in it. Reading the ingrdients made me hungry. Yes this is a populr burrito/wrap here in Cali Shanti/Mary-Anne
