Ingredients

 
1 cup sushi rice (short grain rice)
 
1.25 cups water
 
2 Tbs rice vinegar
 
1/2 English cucumber, cut into long thin strips
 
1/2 avocado cut into thin strips
 
1 tsp sesame seeds
 
1 tsp pickled ginger
 
1 tsp wasabi powder + 1 tsp water
 
2 tbs imitation crab meat
 
2 - 3 sheets nori seafood vegetable

Directions

rinse rice in cold water until water runs clear, drain. combine rice and water in a pot and bring to a boil.
Cover and lower heat, simmer for 20 mins. Leave covered for 5-10 mins. Turn rice into a nonmetallic bowl
and stir in rice vinegar. Let cool. Place a sheet of nori, shiny side down on sushi mat covered with plastic wrap.
Place a single layer of rice all over nori, leaving a 1" border on far side. In the middle layer cucumber, avocado,
sesame seeds, ginger and crab meat - dot with wasabi paste first if desired. Roll up tightly. Cut into
rolls with a knife dipped in cold water. serve.

TIP-for ease of slicing sushi rolls-use very sharp knife, don't mash it, just make a clean slice, rinse knife with warm water to help knife slice easier. Shanti/Mary-Anne

Nori is seaweed, an edible, dried preparation of red algae of the genus Porphyra.. There are various qualities of nori-make sure not to get a chewy one-hard to eat the sushi. I use Dungeness crab for California rolls-but fresh Dungeness is abundant here in the San Francisco Bay Area. Seasoned Rice Vinegar has a great flavour and is great for salads also. Be sure and check out the videos of Tracy Griffith from the Tomato Fest on how to make American Sushi. Yes her sister is Melanie Griffith! BTW-try mixing the wasabi powder with water-it spreads easily that way. Real wasabi is amazing. Some Japanese markets carry it fresh and just grate on to the sushi or serve in a side dish. The heat and flavour is quite different and far more woderful than "wasabi" that is often sold which is merely horseradish and green food colouring. Sorry-never place the sushi roll in the refrigerator. You use warm rice for a reason. Now left over sushi rolls can be refrigerated, and dipped in egg the next day and fried for a tasty lunch. Our many Japanese xchange students taught us this trick over the years. Shanti/Mary-Anne
