California Jambalaya Recipe

Ingredients
Onion – ½ cup, finely chopped
Green Pepper – ½ cup, chopped
Garlic – 1 clove, minced
Bay leaf – 1
Salt – 1 teaspoon
Cooking Oil – 2 tablespoons
Butter or Margarine – 2 tablespoons
Raw Regular Brown Rice – 1 ½ cups
Canned Stewed Tomatoes – 1 (1 pound)
Chicken Broth – 2 cans (14 ounce)
Rhine wine, Sauterne or Other White Dinner Wine – ¾ cup
Cooked Ham – 1-2 cups, diced
Cooked Turkey or Chicken – 1-2 cups, diced
Directions
MAKING
1) In a large skillet, mix together the rice, onion, garlic, pepper, tomatoes, cooked ham, chicken, or turkey, bay leaf, butter, oil, chicken broth and lastly salt
2) Bring the mixture to a boil
3) Lower the flame, cover the skillet with a lid to simmer and cook for 45 minutes
4) Take off the lid and stir the meats around
5) Allow to cook for 15 minutes more till the rice becomes tender
6) Take off from the heat and add in the Rhine Wine
7) Garnish with some chopped Parsley or Parmesan Cheese
SERVING
8) Serve the rice warm on platter
