Baked California Carrot Casserole Recipe

Ingredients
Carrots – 18-20 medium, peeled (2 ½ pounds)
Salt and Pepper to taste
Candied Ginger – 2 teaspoons, finely chopped
Butter or Margarine – 4 tablespoons, divided
Evaporated Milk – 2 tablespoons
Walnuts – 1/8 cup, chopped
Directions
MAKING
1) In a saucepan of simmering salted water, cook the carrots till tender with the lid on
2) Drain the cooked carrots into a colander
3) Using a fork mash the carrots and season with salt and pepper, ginger and 2 tablespoons of butter
4) Mix well by adding the milk
5) Place the carrot mixture in a 1 quart casserole
6) Sprinkle in with nuts and dot with 2 tablespoons of butter
7) Bake in the oven for 30 minutes at 350F

8) Serve warm
