California Shrimp Salad Recipe
Ingredients
| 2 pounds medium-size shrimp | ||
| Boiling water | ||
| Avocado | 1 Large | |
| Green onion dressing | ||
| Iceberg lettuce head | 1 Large, shredded | |
Directions
Place shrimp in a pan, cover with boiling water, and simmer for 5 to 8 minutes or until shrimp turn pink; shell and devein.
Peel, pit, and cube avocado.
Place shrimp and avocado in a bowl.
Prepare green onion dressing and pour over, gently turning to coat well.
Cover and chill for 1 to 2 hours.
To serve, place shredded lettuce on a Serving platter.
With a slotted spoon, lift out shrimp-avocado mixture (reserve marinade) and mound onto lettuce, Pass reserved dressing to spoon over individual servings.
