California Salad Recipe
Ingredients
2 heads romaine lettuce, cut into 1 -inch strips
2 tomatoes, peeled and cut into wedges
1 ripe avocado, peeled and diced
1/2 cup minced Bermuda onions
2 large mushrooms, sliced
1/2 cup fresh grated Parmesan cheese
4 ounces bacon, crisp and hot
Dressing:
7 tablespoons olive oil
1/2 teaspoon salt
1 clove garlic
3 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
1 teaspoon ground black pepper
2 drops Worcestershire sauce
1 coddled egg (1 1/2 minutes)
Directions
Prepare large wooden salad bowl with 1 tablespoon olive oil; add salt, rub with garlic, then remove garlic.
Add romaine lettuce, tomatoes, avocado, onions, and mushrooms, and sprinkle with cheese.
Mix remaining olive oil, vinegar, lemon juice, and seasonings thoroughly.
Add egg and whip vigorously.
