California Crab Salad Sandwich Recipe
Ingredients
| 1 avocado, peeled and cut into thin wedges | ||
| Lemon juice | 1/4 Cup (16 tbs) | |
| Crab meat | 6 Ounce, flaked | |
| 1/2 small rib celery, diced | ||
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Lettuce leaves | 6 | |
| 6 thin pieces whole wheat toast | ||
| Avocado slice | 6 | |
| Alfalfa sprouts | 1/2 Cup (16 tbs) | |
Directions
Brush avocado with part of the lemon juice.
Combine crab meat, celery, mayonnaise and remaining lemon juice; mix well.
Place a lettuce leaf on each piece of toast.
Top with crab salad and an avocado slice.
Garnish with a generous sprinkling of alfalfa sprouts.
Makes 6 servings.
