Ingredients

 
2 tablespoons raisins
 
1/4 cup hot water
 
1/2 cup wild rice, uncooked
 
1 1/2 cups water
 
Vegetable cooking spray
 
1 medium carrot, scraped and shredded
 
1 medium apple, chopped
 
1/4 cup chopped celery
 
1/4 cup chopped green pepper
 
1 1/2 cups water
 
1 1/2 teaspoons chicken-flavored bouillon granules
 
1/4 teaspoon dried whole sage
 
1/8 teaspoon pepper
 
3/4 cup parboiled rice, uncooked

Directions

Combine raisins and hot water in a small bowl; let stand 5 minutes or until raisins are plump.
Drain and set aside.
Wash wild rice in a strainer under cold running water; drain.
Combine wild rice and 1 1/2 cups water in a medium saucepan; bring to a boil.
Cover, reduce heat to low, and simmer 45 minutes or until rice is tender.
Set aside.
Coat a medium skillet with cooking spray; place over medium heat until hot.
Add carrot, apple, celery, and green pepper; saute until crisp-tender.
Set aside.
Combine 1 1/2 cups water, bouillon granules, sage, and pepper in a medium saucepan; bring to a boil.
Add parboiled rice.
Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
Remove from heat; stir in reserved raisins, wild rice, and sauteed vegetables.
Cover and let stand 5 minutes.
Serve hot or cold.
