Calico Brown Rice Recipe
Ingredients
3 tablespoons chopped carrots
2 tablespoons chopped celery
2 tablespoons chopped onion
1 tablespoon unsalted margarine, melted
1 1/4 cups water
1 cup low-sodium chicken broth
1/2 teaspoon salt-free
14 herb-and-spice blend
2/3 cup uncooked brown rice
1 tablespoon chopped fresh parsley
Directions
Saute carrots, celery, and onion in margarine in a large skillet 1 minute.
Add water, chicken broth, and herb-and-spice seasoning, bring to a boil.
Add rice.
Cover, reduce heat, and simmer 1 hour or until liquid is absorbed and rice is tender.
Stir in chopped parsley.
