Calico Relish Recipe
Ingredients
| 2 cups sliced cauliflower flowerets | ||
| Carrots | 2 , cut into strips | |
| Green pepper | 1 To taste, cut into strips | |
| Green beans | 12 | |
| Zucchini | 1 , sliced | |
| 1 small jar stuffed olives | ||
| Wine vinegar | 3/4 Cup (16 tbs) | |
| Olive oil | 1/4 Cup (16 tbs) | |
| Sugar | 1 Tablespoon | |
| Salt | 1 Teaspoon | |
| Oregano | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Water | 1/4 Cup (16 tbs) | |
Directions
In large pan, combine all ingredients except tomatoes.
Bring to a boil and simmer covered, 5 minutes.
Cool and let marinate at least 24 hours.
Store in refrigerator.
Cherry tomatoes may be added just before serving.
