Calico Potato Salad Recipe
Ingredients
| Potatoes | 5 Medium, sliced | |
| 2 cups drained cooked cut green beans | ||
| Beets | 1 8 Ounce, drained | |
| Celery | 1/2 Cup (16 tbs), sliced | |
| Green onions | 1/2 Cup (16 tbs), sliced | |
| Radishes | 1/2 Cup (16 tbs), sliced | |
| Salt | 1 Teaspoon | |
| 1/2 teaspoon coarse black pepper | ||
| Horseradish | 1 Cup (16 tbs) | |
Directions
Chill the vegetables thoroughly (cut larger beets in half).
Combine, and season with salt and pepper.
Just before serving, toss vegetable mixture with 1 cup Horseradish Dressing.
Makes 8 servings.
Horseradish Dressing: Blend 1/2 cup mayonnaise or salad dressing, 1/4 cup sour cream, and 3 tablespoons prepared horseradish.
Add 1 cup clear French dressing, stirring till smooth.
Chill.
