Calico Potato Salad Recipe
The calico potato salad is a mixed vegetable salad made with cooked potatoes and fresh chopped veggies. Made with added eggs, the calico potato salad is dressed with a hint of mustard and celery seeds with mayo.
Ingredients
| 6 cups diced cooked potatoes | ||
| Cucumber | 1/2 Cup (16 tbs), diced | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Pimiento | 3 Tablespoon, chopped | |
| Salt | 1 1/2 Teaspoon | |
| Celery seed | 3/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 2 hard-cooked eggs | ||
| Whipping cream | 1/2 Cup (16 tbs), Whipped | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Vinegar | 2 Tablespoon | |
| Prepared mustard | 1 Tablespoon | |
Directions
Combine first 8 ingredients.
Coarsely chop eggs, reserving 1 whole egg yolk.
Add chopped eggs to potato mixture.
Chill.
Combine remaining ingredients, except yolk; toss with potato mixture 1/2 hour before serving.
To serve, spoon into lettuce-lined bowl.
