 Breadcrumbs2 Tablespoon
 Pepper1/4 Teaspoon
 Garlic powder1/8 Teaspoon
 1 1/ 2 pounds thinly sliced calf's liver
 Vegetable cooking spray
 Green onion2 Tablespoon, finley chopped
 Tomato2 Tablespoon, finley chopped
 2 tablespoons 1/2 ounce) shredded sharp Cheddar cheese
 Cilantro1 Tablespoon, minced

Directions

Combine first 3 ingredients, stirring well; dredge liver in mixture.
Coat a large skillet with cooking spray; place over medium heat until hot.
Add liver, cook 5 minutes on each side or until browned.
Drain, transfer to a warm platter.
Combine remaining ingredients in a small bowl; toss well.
Spoon 1 tablespoon mixture onto each slice of liver, serve immediately.
