Calf's Liver With Curried Onions Recipe
Ingredients
1 large yellow onion, sliced
1/4 cup sherry
1/2 teaspoon curry powder
1/2 teaspoon salt
Freshly ground pepper
1/4 cup golden raisins
2 teaspoons clarified butter
1 pound calf's liver

Directions
1. Simmer onion slices in wine in a medium skillet until onion is tender and wine is absorbed (about 10 minutes). Stir in curry powder, salt, pepper, raisins, and 2 teaspoons butter.
2. While onion is cooking, brush liver slices very lightly with clarified butter.
