Calf's Brains Recipe

Ingredients
1 calf's brain, trimmed
2 tsp lemon juice
1 tsp cider vinegar
1 tsp thyme
1 bay leaf
1/3 cup onion, chopped
1 parsley sprig, chopped
1/3 cup celery, chopped
Directions
Rinse brain thoroughly.
Cover with water.
Add lemon juice and marinate for 2 to 4 hours.
Drain.
Cover with cold water.
Add remaining ingredients.
Bring to boil.
Cover and simmer for 20 to 25 minutes, or until thoroughly cooked.
Remove from heat.
Allow to rest 15 minutes.
Remove brain from water.
Slice thin.
Cover with water.
