Calamari With Pesto Sauce Recipe
Calamari with pesto sauce is a preparation of squid hoods cooked in a microwave. This is an italain dish made with squid cooked along with pesto sauce with basil and pine nuts. Flavored with white wine, the calamari is served with the pesto sauce poured over it and is an wxcellent side for pasta. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
500 g squid hoods
1/2 teaspoon meat tenderiser
1/2 cup white wine
2 teaspoons lemon juice
1 1/2 cups fresh basil leaves
1/4 cup toasted pine nuts
1/2 cup olive oil
2 cloves garlic, crushed salt and pepper
Directions

Cut squid hoods into rings.
Sprinkle with meat tenderiser.
Refrigerate for 30 minutes.

Poach squid in white wine and lemon juice.
Cook, covered, for 5-6 minutes on MEDIUM or until squid is firm.

Place basil leaves, pine nuts, olive oil, garlic, salt and pepper into a food processor.
Blend until smooth.
Pour over calamari.
Cut squid hoods into rings.
