Calabacita Recipe
Calabacita is a mouth watering and addictive meat and pork preparation. Try the Calabacita at home, I am sure everyone will get hooked to it!
Ingredients
2 lb. pork
1 Ige. onion, diced Margarine
2 No. 2 cans whole kernel corn
2 No. 2 cans tomatoes
1/2 lb. Mexican squash or yellow summer squash, chopped or sliced
1 tsp. red pepper
1 tsp. coarsely ground pepper
Salt to taste
4 tbsp. chili powder or to taste
2 c. rice
Directions
Cut pork into bite sized cubes; brown in gallon pot.
Saute onion in margarine; add to meat.
Add corn, tomatoes and squash.
Mix and add peppers, salt and chili powder.
Cook, uncovered, over low heat for approximately 1 hour, stirring frequently.
Prepare rice according to package directions.
Serve stew mixture over bed of rice.
