Calabacita Recipe
Ingredients
2 lb. pork
11ge. onion, diced Margarine
2 No. 2 cans whole kernel corn
1/2 lb. yellow squash, chopped
2 No. 2 cans tomatoes
1 tsp. red pepper
1 tsp. coarsely ground pepper
Salt to taste
1/4 c. chili powder
2 c. rice
Directions
Cut pork into bite-sized cubes; brown in small amount of fat in Dutch oven.
Saute onion in marga- rine in small skillet; add to pork.
Add corn, squash and tomatoes; mix thoroughly.
Add peppers, salt and chili powder.
Cook, over low heat for 1 hour; stir frequently.
Prepare rice according to package direc- tions.
Serve pork over rice.
