Ingredients

 Stewed tomatoes1 Can (10oz), undrained
 Celery stalks2 Medium, chopped
 Onion1 Medium, finely chopped
 1/2 medium-size green pepper, seeded and chopped
 Garlic1 Clove (5gm), minced
 Bay Leaf1
 3/4 teaspoon dried whole rhyme, crushed
 Pepper1/2 Teaspoon
 Salt1/4 Teaspoon
 Hot Sauce1/4 Teaspoon
 Haddock fillets1 1/2 Pound
 Vegetable cooking spray

Directions

Combine first 10 ingredients in a medium saucepan, stirring well.
Bring to a boil.
Cover; reduce heat, and simmer 25 minutes, stirring occasionally.
Rinse fillets with cold water, and pat dry.
Arrange fillets in a 12- x 8- x 2-inch baking dish coated with cooking spray.
Bake, uncovered, at 400° for 15 minutes or until fillets flake easily when rested with a fork.
Remove bay leaf from sauce mixture, and discard.
Serve immediately.
