Cajun Mushroom Caps Recipe
Cajun Mushroom Caps is a juicy dish of flavored mushrooms. This bake and serve mushroom recipe is rich with the creamy flavor of cheese. Cajun Mushroom Caps is less spicy and is pretty easy to brew.
Ingredients

| 6 Ounces Fully Cooked, Low-Fat Deli Ham, Finely Chopped | ||
| Red bell pepper | 3 Tablespoon, finley chopped | |
| Shredded sharp Cheddar cheese | 1/4 Cup (16 tbs), divided | |
| Dry bread crumbs | 1/4 Cup (16 tbs) | |
| Minced parsley | 2 Tablespoon | |
| Cajun Seasoning Mix, To Taste | ||
Directions
Rinse mushrooms, remove stems.
Finely chop stems, set aside.
Place mushroom caps on a lightly greased baking sheet, set aside.
Spray a skillet with non-stick vegetable spray.
Add reserved mushroom stems, ham and bell pepper; saute 10 minutes.
Let cool.
In a large mixing bowl, combine ham mixture, 1/2 cup Cheddar cheese, bread crumbs and parsley.
Add Cajun seasoning to taste, mix well.
Stuff reserved mushroom caps with ham mixture.
Bake in a preheated 400-degree oven 8 to 10 minutes.
Remove from the oven, sprinkle remaining 1/4 cup cheddar cheese over mushrooms.
Serve immediately.
