• Beans
 
• Chopped onions
 
• Oven browned bacon (3-4 pieces)
 
• 2 Minced garlic cloves
 
• ½ tsp dried thyme
 
• cut up sausages
 
• long grain rice
 
• roasted boneless, skinless chicken thighs
 
• 1 cup seasoning blend
 
• 6 cups water

Directions for preparation:

• Add the onions in a sauce pan and add the bacon fat to it.
• Let it soften a little on medium heat.
• Season with salt and pepper.
• Add 2 cups of water.
• Add the beans and the garlic.
• Add the dried thyme.
• Crumble the bacon and add to the pan.
• Cover the pan and let it simmer for an hour (till the beans get tender).
• Brown the sausage pieces in a skillet and take them out.
• Sauté the seasoning blend in the skillet wit the sausage grease.
• Add the sausage and roasted chicken pieces.
• Add 4 cups water and 2 cups of rice and bring it to a boil.
• Stir. Cover and let it cook for 25 minutes
• Turn heat off after that and let it sit with cover on for 15 minutes.
• Serve with the beans.
