Cajun Glazed Ham Recipe
The cajun glazed ham is a roasted ham recipe prepared with a cajun flavored glaze. The glaze is prepared with a base of vinegar, with jalapenos, brown sugar, mustard, paprika, thyme and oregano and is sperad on the ham before roasting.
Ingredients
4 1b boneless cooked ham 2 kg
Glaze:
1 cup brown sugar 250 mL
4 jalapenos, seeded and chopped 4
2 cloves garlic, minced 2
2 tbsp white wine vinegar 25 mL
2 tbsp grainy mustard or Dijon mustard 25 mL
1 tbsp paprika 15 mL
1 tsp pepper 5 mL
1/2 tsp cayenne or hot red pepper sauce 2 mL
1/2 tsp dried thyme 2 mL
1/2 tsp dried oregano 2 mL
Directions
Trim ham of all fat.
Pierce ham all over with long skewer and score surface.
In bowl, combine brown sugar, jalapenos, garlic, vinegar, mustard, paprika, pepper, cayenne, thyme and oregano.
Place ham on foil-lined baking sheet.
Spread with one-third of glaze.
Bake in preheated 350°F/180°C oven for 20 minutes.
Baste with one-third more glaze.
Bake for 20 minutes longer.
Repeat.
Total cooking time should be 1 to 1 1/2 hours.
Baste often.
Allow to rest for about 15 minutes before carving.
