Recipe Story

Recipe comes from an old friend who gotr it from his mama! ORIGIN: Lee Robineaux, Metarie-LA, circa 1999

Ingredients

 
12 ea Soft-Shell Crabs cleaned
 
1 qt milk
 
4 ea egg yokes well beaten
 
1 ea clove garlic minced
 
2 tb parsley minced
 
1/2 ts thyme
 
2 tb chives minced
 
1 tb celery seeds
 
1/4 ts tarragon
 
1/4 ts nutmeg
 
2 tb onion minced
 
4 c Seasoned Fish Fry
 
Salt & pepper to taste
 
2 tb leeks minced
 
Hot Pepper sauce to taste
 
1 1/2 qt peanut oil

Directions

Place crabs in a 4 qt. container.
Beat egg yokes well, add milk & seasonings.
Mix well.
Pour this mixture over crabs.
Cover with a board & allow to soak for approx. 30 mins.
Crabs will absorb almost all liquid & seasonings.
Take each crab from marinade & roll in any good seasoned fish fry mixture.
Pat well to coat evenly.
Allow to sit for 15 mins.
Pre-heat 1 1/2 qts peanut oil in a heavy pot.
Make sure that oil is hot before crabs go into it.
Completely cover crabs with while cooking.
Fry crabs till they are golden brown & serve immediately.
