Cajun Jambalaya Recipe
Ingredients
| Shortening | 1 Tablespoon | |
| Flour | 1 Tablespoon | |
| Ham | 1/4 pound, cubed | |
| Green pepper | 1/4 Cup (16 tbs), minced | |
| Bay Leaf | 1 | |
| Thyme Sprig | 1 Small | |
| Parsley sprigs | 1 , minced | |
| Onion | 1 , sliced | |
| Garlic | 1 Clove (5gm), minced | |
| Shrimp | 1 pound, peeled | |
| Tomatoes | 2 Cup (16 tbs) | |
| Tomato juice | 1 1/4 Cup (16 tbs) | |
| Rice | 1 Cup (16 tbs), uncooked | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
MAKING
1. In a heavy saucepan over medium heat melt shortening, stir in next three ingredients and simmer for 5 minutes with constant stirring.
2. Add remaining ingredients except rice and let it boil.
3. Press rice into liquid, cover and simmer at 200 degrees F for 40 minutes.
SERVING
4. Serve hot with desired garnish.
