Ingredients

 4 x 200 g / 7 oz boneless chicken breast fillets
 Garlic2 Clove (5gm), crushed
 1 tablespoon onion salt
 Ground white pepper1 Tablespoon
 1 tablespoon cracked black peppercorns
 Cayenne pepper2 Teaspoon
 Paprika1 Tablespoon
 Mixed herbs1 Tablespoon, dried
 Pawpaw salsa
 Pawpaw1 Small, diced
 Cucumber1 Small, diced
 Mint leaves2 Tablespoon
 Natural yogurt2 Tablespoon
 Lime juice2 Tablespoon

Directions

1. Rub chicken with crushed garlic. Place onion salt, white pepper, black pepper, cayenne pepper, paprika and mixed herbs in a bowl and mix to combine.
2. Rub spice mixture over chicken, place on an oiled baking tray and bake at 180°C / 350°F / Gas 4 for 25-30 minutes or until chicken is tender. Cover and stand for 5 minutes before serving.
3. To make salsa, place pawpaw, cucumber, mint, yogurt and lime juice in a bowl and mix to combine.
