Cajun Chicken with Pawpaw Salsa Recipe
Ingredients
| 4 x 200 g / 7 oz boneless chicken breast fillets | ||
| Garlic | 2 Clove (5gm), crushed | |
| 1 tablespoon onion salt | ||
| Ground white pepper | 1 Tablespoon | |
| 1 tablespoon cracked black peppercorns | ||
| Cayenne pepper | 2 Teaspoon | |
| Paprika | 1 Tablespoon | |
| Mixed herbs | 1 Tablespoon, dried | |
| Pawpaw salsa | ||
| Pawpaw | 1 Small, diced | |
| Cucumber | 1 Small, diced | |
| Mint leaves | 2 Tablespoon | |
| Natural yogurt | 2 Tablespoon | |
| Lime juice | 2 Tablespoon | |
Directions
1. Rub chicken with crushed garlic. Place onion salt, white pepper, black pepper, cayenne pepper, paprika and mixed herbs in a bowl and mix to combine.
2. Rub spice mixture over chicken, place on an oiled baking tray and bake at 180°C / 350°F / Gas 4 for 25-30 minutes or until chicken is tender. Cover and stand for 5 minutes before serving.
3. To make salsa, place pawpaw, cucumber, mint, yogurt and lime juice in a bowl and mix to combine.
