Cajun Beans and Barley Recipe
Ingredients
| Water | 3/4 Cup (16 tbs) | |
| 1/2 cup quick-cooking barley | ||
| 1/4 cup chopped green sweet pepper | ||
| Onion | 1/4 Cup (16 tbs), chopped | |
| Pinto beans | 1 15 Ounce, drained, rinsed | |
| Stewed tomatoes | 1 14 1/2 Ounce | |
| 1 cup loose-pack frozen whole kernel corn | ||
| 1 tsp. Cajun seasoning or 1/2 tsp. crushed red pepper | ||
Directions
1. In a medium saucepan bring water to boiling. Stir in barley, sweet pepper, and onion. Return to boiling; reduce heat. Simmer, covered, 10 to 12 minutes or till barley is tender and water is absorbed.
2. Stir the beans, tomatoes, corn, and Cajun seasoning or red pepper into the mixture in the saucepan. Cook, covered, over medium heat till bubbly. Cook for 2 to 3 minutes more or till corn is tender.
