Ingredients
1 cup cognac
4 small cinnamon sticks
16 whole cloves
20 small cubes sugar
4 tablespoons chocolate syrup
4 long strips orange peel
4 strips lemon peel
4 cups hot demitasse-strength coffee
Directions
Put cognac, cinnamon, cloves, sugar, chocolate syrup, orange and lemon peels in blazer pan over moderate heat.
When warm, put over hot water in water pan.
Fill a ladle with additional cognac and a cube of sugar.
Ignite and lower into mixture in blazer pan to light.
Stir and carefully pour hot coffee into the blazing mixture and continue stirring.
When the blaze dies down, serve in Brulot or demitasse cups.
