| Cider vinegar | 2 Tablespoon (DRESSING) | |
| Lemon juice | 1 Tablespoon (DRESSING) | |
| Salt | 1/4 Teaspoon (DRESSING) | |
| Pepper | 1/4 Teaspoon (DRESSING) | |
| Anchovy paste | 2 Teaspoon (DRESSING) | |
| Parmesan cheese | 1/2 Cup (16 tbs) (DRESSING) | |
| Romaine, medium head 1 | ||
| Lettuce, small head 1 | ||
| Croutons | 2 Cup (16 tbs) (SALAD) | |
Directions
Dressing: Combine oil and garlic.
Let stand overnight or at least a few hours.
Remove garlic.
Either discard or chop it finely to add a stronger garlic flavor.
Add remaining ingredients to oil in bowl.
Whisk together well.
Makes about 1 cup (250 mL).
Salad: Tear greens into bite size pieces into large bowl.
Add croutons and dressing.
Toss well.
