Ingredients

 Cooking oil1/8 Cup (16 tbs) (DRESSING)
 Garlic1 Clove (5gm), quartered (DRESSING)
 Egg1 (DRESSING)
 Cider vinegar2 Tablespoon (DRESSING)
 Lemon juice1 Tablespoon (DRESSING)
 Salt1/4 Teaspoon (DRESSING)
 Pepper1/4 Teaspoon (DRESSING)
 Anchovy paste2 Teaspoon (DRESSING)
 Parmesan cheese 1/2 Cup (16 tbs) (DRESSING)
 Romaine, medium head 1
 Lettuce, small head 1
 Croutons2 Cup (16 tbs) (SALAD)

Directions

Dressing: Combine oil and garlic.
Let stand overnight or at least a few hours.
Remove garlic.
Either discard or chop it finely to add a stronger garlic flavor.
Add remaining ingredients to oil in bowl.
Whisk together well.
Makes about 1 cup (250 mL).
Salad: Tear greens into bite size pieces into large bowl.
Add croutons and dressing.
Toss well.
