Caesar Salad With English Mustard Recipe
Ingredients
| 3 anchovy fillets, cut into small pieces | ||
| Garlic | 1 Clove (5gm), crushed | |
| 1/2 tsp. hot English mustard | ||
| 4-5 dashes Worcestershire sauce | ||
| 12 bread sticks, broken up into tiny pieces | ||
| Juice of 1/2 lemon | ||
| Egg yolks | 2 | |
| Parmesan cheese | 3 Tablespoon, grated | |
| 1/4 cup Planters Peanut Oil | ||
| Romaine lettuce head | 1 Large | |
Directions
Put the anchovy pieces, garlic, mustard and Worcestershire sauce into bottom of a very large wooden salad bowl.
Add a few bread sticks pieces to help with the crushing.
With a wooden spoon or masher, crush and mash the ingredients into a thick, smooth paste for about 5 minutes.
Add lemon juice and egg yolks and beat the dressing carefully again.
Add 1 tbsp. grated cheese and pour in the oil in a thin stream, beating very fast until the dressing is thick and creamy.
Meanwhile, you have washed the lettuce.
Tear it into chunks and pat dry with a linen or paper towel.
Put the lettuce into the dressing, add the rest of the cheese and broken bread sticks, and toss and toss and toss!
