Caesar Salad Recipe
Ingredients
| 6 cups bite-size salad greens | ||
| Olive oil | 4 Tablespoon | |
| 2 tbs lemon juice or vinegar | ||
| Worcestershire sauce | 1 Teaspoon | |
| 1 coddled egg (1 1/2 minutes in boiling water) | ||
| Dry mustard | 1/2 Teaspoon | |
| Salt | 1 Teaspoon | |
| 1/4 cup French dressing Garlic croutons | ||
| 2 or 3 tbs Parmesan cheese | ||
Directions
For greens, use lettuce, romaine, endive, tiny spinach leaves, sliced green onions.
Toss well-chilled greens in a bowl and, just before serving, sprinkle with oil.
Toss to coat each leaf.
Beat the next six ingredients in a small bowl, pour over the salad and toss lightly.
Sprinkle with the croutons and cheese.
Garnish with anchovy fillets if you wish.
