Caesar Salad Recipe

Ingredients
1 small clove garlic, minced or pressed
1/3 cup olive oil or salad oil
1 cup croutons, purchased or homemade
1 large head romaine, broken into bite-size pieces
Salt and pepper
1 egg
Boiling water
About 2 tablespoons lemon juice
3 to 4 anchovy fillets, drained and chopped
1/4 cup grated Parmesan cheese
Directions
If time permits, combine garlic and oil and let stand for several hours.
In a frying pan over medium heat, brown croutons in 2 tablespoons of the garlic-flavored oil, stirring frequently; set aside.
Place romaine in a salad bowl; sprinkle with salt and pepper to taste.
Pour remaining garlic oil over romaine and toss until leaves are thoroughly coated.
Slip egg into boiling water for 1 minute; remove and break into salad.
Drizzle lemon juice over all and mix thoroughly.
Add anchovies and grated cheese; mix thoroughly.
Add croutons and toss.
