Ingredients

 
Cabbage or sprouts – 1 ½ pound, chopped
 
Onions – 2, chopped
 
Medium potato – 1, sliced
 
Stock - 2 pints or half milk half stock
 
Salt, pepper – as per taste
 
Bouquet garni – 1 stalk
 
Potato flour - ½ ounce
 
Plain flour - 1 ounce
 
Butter - 2 ounce
 
Cream or yoghurt - 1/4 pint
 
Chopped parsley and grated cheese – for garnishing

Directions

MAKING
1. In a pan, melt butter.
2. Sauté cabbage, onion and potato in butter until it become soft but not tender.
3. Add stock.
4. Simmer for 15 minutes.
5. Add seasonings and bouquet garni.
6. Simmer until the vegetables are tender.
7. Sieve the vegetables keeping some aside for garnishing.
8. Return to sauce pan. Add flour mixed with cold water.
9. Simmer for 5 minutes.

SERVING
10. In each serving, place whipped cream or yoghurt in spoonfuls.
11. To serve cabbage and brussels sprouts, sprinkle with parsley and cheese.
