2 cups finely chopped or shredded cabbage
 
2 cups finely chopped or shredded cooked beets (about 4 medium sized)
 
2 tablespoons grated fresh horseradish
 
1/2 teaspoon salt
 
1/3 cup sugar
 
1/2 teaspoon mustard seed
 
1 1/3 cups cider vinegar

Directions

Combine all ingredients in a bowl; mix well.
Store in tightly covered container in refrigerator.
(Relish may be stored several weeks if kept well chilled.)
