Cabbage Soup Recipe
Ingredients
| Vegetable oil | 3 Tablespoon | |
| 1 medium-sized onion, finely chopped | ||
| Carrot | 1 , diced | |
| 1 celery stalk with leaves, diced | ||
| 1 small head green cabbage, shredded | ||
| Caraway seeds | 1/2 Teaspoon | |
| 1 quart homemade vegetable or chicken broth | ||
| Salt | 1/2 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| Frozen chopped spinach | 1/2 pound, trimmed | |
Directions
1. Heat the oil in a large heavy kettle and saute the onion until tender but not browned. Add the carrot, celery, cabbage, and caraway seeds and cook, stirring, for 5 minutes.
2. Add the broth, salt, and pepper. Bring to a boil, cover, and simmer for 30 minutes. Add the spinach and cook for 5 minutes longer.
