Cabbage Salad Mold Recipe
The cabbage salad mold is a gelatin salad mold prepared with shredded cabbage and veggies. Flavored with grapefruit juice to taste, the cabbage salad mold is sweetened with a dash of sugar and chilled to set. Served with lettuce leaves for garnish, it makes an a great veggie mold.

Ingredients
2 cups grapefruit juice
1 envelope unflavored gelatin
2 tablespoons sugar
1 cup coarsely shredded green cabbage
1/2 cup coarsely shredded red cabbage
1/4 cup shredded carrot
1/4 cup coarsely chopped sweet green pepper
1 1/2 teaspoons grated yellow onion
Lettuce leaves
Directions
Pour 1 cup of the grapefruit juice into a large heatproof bowl and sprinkle the gelatin over it.
Let soften for 2 to 3 minutes.
Meanwhile, pour the remaining grapefruit juice and the sugar into a small heavy saucepan and bring to a boil over moderate heat, stirring occasionally to dissolve the sugar.
Add to the gelatin mixture and stir until the gelatin dissolves completely.
Chill in the refrigerator until the mixture is the consistency of unbeaten egg whites about 1 to 1 1/4 hours.
Fold in the green cabbage, red cabbage, carrot, green pepper, and onion, and turn the mixture into an ungreased 4 cup decorative mold.
Cover and chill for 6 hours or overnight until firm.
Unmold onto a chilled platter and garnish with lettuce leaves.
