Cabbage Relish Recipe
Ingredients
| 1 small white cabbage, shredded | ||
| Carrots | 3 , thinly sliced | |
| 1/2 kg. / 1 lb. onions, chopped | ||
| 4 green peppers, pith and seeds removed and chopped | ||
| 30 ml. / 2 tablespoons salt | ||
| 1/2 kg. / 1 lb. sugar | ||
| 15 ml. / 1 tablespoon mustard seeds | ||
| Cayenne pepper | 1 Pinch | |
| 1 1/4 L / 2 pints white vinegar | ||
| 15 ml. / 1 tablespoon celery seeds | ||
| Bay leaves | 4 | |
Directions
Arrange the vegetables in a bowl and sprinkle over the salt.
Cover and set aside overnight.
Drain, then pack into hot, sterilized jars.
Put all the remaining ingredients, except the bay leaves, into a saucepan and bring to the boil.
Simmer for 5 minutes.
Pour over the vegetables and set aside to cool.
Add a bay leaf to each jar and seal when cold.
