 1 small white cabbage, shredded
 Carrots3 , thinly sliced
 1/2 kg. / 1 lb. onions, chopped
 4 green peppers, pith and seeds removed and chopped
 30 ml. / 2 tablespoons salt
 1/2 kg. / 1 lb. sugar
 15 ml. / 1 tablespoon mustard seeds
 Cayenne pepper1 Pinch
 1 1/4 L / 2 pints white vinegar
 15 ml. / 1 tablespoon celery seeds
 Bay leaves4

Directions

Arrange the vegetables in a bowl and sprinkle over the salt.
Cover and set aside overnight.
Drain, then pack into hot, sterilized jars.
Put all the remaining ingredients, except the bay leaves, into a saucepan and bring to the boil.
Simmer for 5 minutes.
Pour over the vegetables and set aside to cool.
Add a bay leaf to each jar and seal when cold.
