Ingredients

 
1 large red pepper, white pith removed, seeded and finely sliced
 
1 large green pepper, white pith removed, seeded and finely sliced
 
6 to 8 spring onions, finely chopped
 
1 cucumber, cut into 1/2 inch cubes
 
1 lb. tomatoes, finely sliced
 
1/2 white cabbage, coarse outer leaves removed, washed and finely sliced
 
2 tablespoons clear honey
 
Juice of 1 lemon
 
10 tablespoons olive or vegetable oil
 
4 tablespoons vinegar
 
2 teaspoons salt
 
1 teaspoon freshly ground black pepper

Directions

Combine the peppers, spring onions [scallions], cucumber, tomatoes and cabbage in a large salad bowl.
Put the honey, lemon juice, oil, vinegar, salt and pepper into a screw top jar and shake it until the dressing is well mixed.
Pour the dressing over the salad just before serving and toss well.
